KRISPY KRUNCHIES  
(Thank you Mito Tamashiro!!, Hanahauoli School)
Cream together well:
1 cup butter
1 cup brown sugar
1 cup white sugar
Add:
2 eggs----one at a time--plus:
1 teaspoon vanilla
Combine together, then add to creamed mixture:
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Stir in:
1 1/2 cups rolled oats
2 cups Rice Krispies
1/2 cup chopped walnuts
1/2 cup chopped pecans
12 oz. (2 cups) chocolate chips
Drop by teaspoons onto greased baking sheets.
Bake 350 degrees---12-15 minutes.  Cool on cooky racks.

 

PEANUT BUTTER COOKIES
Sift together:
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
Cream together:
1 cup butter
1 cup white sugar
1 cup brown sugar
Add:
2 eggs
1 cup peanut butter
1 teaspoon vanilla
Beat well.
Add dry ingredients.  Mix well.
Shape dough into walnut sized balls, place on greased cooky sheets.  Press with fork in crisscross.
If dough sticks, dip into powdered sugar before each crisscross.
Bake:  350 degrees 8 minutes or until browned.  Cool on cooky racks.

 

HEALTHY BANANA DATE OATMEAL COOKIES   (Thank you Marcy Katz!)
3 ripe bananas
2 cups rolled oats
1 cup chopped dates
1/3 cup vegetable oil
1 teaspoon vanilla
In large bowl, mash bananas.
Stir in oats, dates, oil & vanilla.  Mix well.  Allow to sit for 15 minutes.
Drop by teaspoons full onto greased cookie sheets.
Bake 350 degrees for 20 minutes or until lightly browned.

 

CHOCOLATE CHIP BROWNIES  
(Thank you Alice Ball!)
Cream together:
2/3 cup butter
2 cups brown sugar
Add one at a time:
2 eggs
Sift together and add gradually to the  above:
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Stir in:
1 teaspoon vanilla
 12 oz. chocolate chips
Spread in 9"x13" pan.
Bake:  350 degrees--35 minutes.

 

CARAMEL CUTS   (Thank you Susan Soong!)
1 cup melted butter
3 1/2 cups brown sugar (well packed--buy 2 boxes)
4 eggs
2 cups flour
1 1/4 teaspoon vanilla
1 1/4 teaspoon baking powder
Combine melted butter and sugar.  Add eggs.  Add other ingredients.
Put  batter in greased jelly roll pan @ 15"x10 1/2"x1".
Bake 350 degrees 35 minutes.
Cut when warm.
FUDGE BROWNIES   (Thank you Susan Soong!)
Melt 1 cup butter (2 sticks) and 4 oz. unsweetened chocolate over low heat.
Remove from stove. 
Beat in 2 cups sugar and 3 eggs until well blended.
Stir in 1 cup flour, 1/2 teaspoon salt, 1 teaspoon vanilla & 1 to 2 cups chopped walnuts.
Spread into greased 13"x9" pan.
Bake at 350 degrees, 35 minutes.  (30 minutes if using disposable aluminum pan). 
Cool.  Cut into squares.
 
For chewy brownies, place cooled pan in fridge for several hours.  If too hard to cut at this point, allow to warm up 1/2 an hour or so.

 

FIREMAN CHOCOLATE CHIP COOKIES  
(makes a lot!)
Cream together:
2 1/4 cups brown sugar
2 1/4 cups granulated sugar
2 1/2 cups butter (4 1/2 sticks)
Add and beat well:
5 eggs
2 1/2 teaspoons vanilla
Combine in separate bowl & blend well into above mixture:
4 1/2 cups flour
2 1/4 teaspoons baking soda
1 1/8 teaspoons salt
Add and stir in:
4 1/2 cups oatmeal
12 oz. chocolate chips
1 cup chopped walnuts
Spoon walnut sized clumps onto greased cooky sheets.
Bake:  375 degrees----15 to 20 minutes 

 

BAKING TIPS:

1.  If you use aluminum foil on top of your cooky sheets, you will not have to grease them!
 
2.  "Ice cream scoops" come in varied sizes and make portioning cooky dough onto cooky sheets a  snap!
3.  Nuts are optional in most baking recipes.  (If you DO leave them out, please let us know so we can tell those amongst our customers who do NOT like them.)
 
4.  Dried cranberries, blueberries, cherries, etc. may be substituted for raisins or other dried fruits to suit your taste.
5.  Unsalted butter is used in all recipes here.  If you do use the salted variety, cut the amount of salt a bit to compensate.

 

OATMEAL BARS WITH DATES & WALNUTS  
(credit due:  
Martha Stewart's Cookies)    
preheat oven:  350 degrees
2 3/4 cups rolled oats--(grind 1 1/4 cups--reserve 1/2 cup for topping--see below)
3/4 cup whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
2 cups packed light brown sugar
3 large eggs
2 1/2 teaspoons pure vanilla extract
1 1/2 cups walnuts--toasted & chopped
1 cup dates coarsely chopped
vegetable oil spray
Finely grind:  1 1/4 cups of oatmeal in food processor.
Stir together:  
The ground oats, 1 cup whole oats, the whole wheat flour, baking powder, salt, cinnamon & allspice in large bowl.
Beat:  butter & brown sugar on medium until pale & fluffy--@ 5 minutes.
Mix in:  eggs & vanilla.  Reduce speed to low.  
Mix in:  oat mixture until just combined.
Mix in:  walnuts & dates.
Coat a 9"x13" baking dish with vegetable spray.
Using offset spatula, spread batter evenly in dish.  Scatter remaining 1/2 cup whole oats over top.
Bake, rotating dish half way through' until cake tester in center comes out clean---@ 35 minutes.
Let cool completely in dish on wire rack.  Cut into bars or squares.
